It would be easy to think that Dearborn stops at properly great granola. But their mission extends beyond that, to reimagining breakfast. This marks a valid starting point – breakfast tends to be the most performative and underappreciated of meals, where fueling yourself for the day ahead, often in negligent haste, is the ultimate objective. It is hard to appreciate food when you have one foot out of the door. The emergence of ‘brunch’ forced a certain reconsideration of this early morning repast, but that has always felt exclusively weekend-y and substantial. Dearborn wants to spotlight the everyday of the week kind of breakfast, by proving that it can be as exciting as dinner. No small challenge. But with Chef Chris Kong’s long history of cooking in some of the world’s finest kitchens and his stubborn refusal to let breakfast lie, Dearborn has a highly plausible foundation to “break” the rules.
